Introduction to Events & Food Management

As outlined in the MICE Sustainability Roadmap, launched by Singapore Tourism Board (STB) and Singapore Association of Convention & Exhibition Organisers & Suppliers (SACEOS), Singapore envision to become Asia Pacific’s leading sustainable MICE destination by 2030. Hotels play a crucial role in Singapore's MICE industry targets as they are the primary accommodation and meeting space for a variety of events, such as conferences, weddings, social gatherings, etc. In addition, hotels often offer catering services which are frequently requested for MICE events. Hotels can also offer food and beverage (F&B) services such as restaurants, bars, cafes and room services. In this section, we will look into the 4 focus areas (i.e Energy, Water, Waste & Circular Economy and Sustainable Sourcing) and explore some of the best practices and case studies related to event and food management which hotels can implement on top of the best practices that were discussed under the operations management section.
